Snack Time Guacamole

May 19, 2011

Recently, Jason’s thirteen year old nephew Devon came to live with us. Let me tell you…It has been a real culinary learning experience having a teenage boy in the house! I kind of cringed/shed a tear when Devon went down the list of fruits and vegetables that he doesn’t eat. I mean what kid doesn’t like strawberries or watermelon? And how many times will I have to pose the argument that boys cannot live off chili-cheese fries and hot wings alone?  Oh, and then there’s always the fact that we don’t have soda in the house…gasp! But in the process of learning more about what Devon likes to eat, I discover that he LOVES guacamole and is eager to help me cook. (big smiley face) So Devon and I whipped up a batch together. He helped me snap a few pictures of our snack and just like that Devon has become my newest Freutcake inspiration. What a cool kid.

Guacamole- Freutcake style

4 ripe avocados (or more)
1 jalapeño pepper seeded and minced
1/2 small shallot minced
2 cloves garlic minced
1 lime-the juice
salt & pepper

This is not so much a recipe as my process so feel free to add more or less of all of the ingredients based on the number of avocados you are using. Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Immediately squeeze the juice of one lime over avocado and mash. Remove seeds from jalapeño and finely mince. Mince garlic and shallot. Add jalapeño, garlic and shallot to avocado and stir together. (you may want to add less jalapeño and shallot depending on your taste) Season with salt and pepper. Enjoy!

Yummy!!! This looks de-lic-ious!!! I make a “lazy” guacamole where I use the trader joe’s red salsa and mash it with avocado.

Salsa mashed avocado is what I grew up on! You should definitely try this way. 🙂
