Craving: Chocolate Chip Meringues

It happened to be another one of those “chocolate craving” kind of nights so I whipped up (quite literally) a batch of these chocolate chip meringues. Crisp on the outer shell, chewy with bits of melted chocolate on the inside and hardly any calories so you can eat a boat load! And don’t be intimidated by these fluffy little treats…they require little prep work, few ingredients and the result is quite impressive!


Chocolate Chip Meringue Cookies–  via AllRecipes.com
* Makes 3 dozen

3 egg whites
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2/3 cup white sugar
1 tablespoon unsweetened cocoa powder
1/3 cup semisweet chocolate chips or 2 oz semisweet (baking) chocolate chopped

Directions:

Preheat oven to 300 degrees F (150 degrees C). Combine egg whites, cream of tartar, and vanilla. Beat until the whites form soft peaks. Slowly add sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa and chocolate chips. Drop mixture by teaspoonfuls on to a greased cookie sheet. Bake for 25 to 30 minutes.

    I’ve never been a fan of meringue, but chocolate sounds good!
