Oh Goody-Goody Gumdrops!

Oh Goody-Goody Gumdrops! Well technically they are jellies but gumdrops kept floating through my head as I made this simple candy. I love the idea of including a few jellies to a tin of your Christmas cookies to add some sparkle. They would also be beautiful served on a platter with other treats for a festive Holiday dessert. Or cut a small slit in the jellies and use to garnish a sweet holiday cocktail. Jellies anyone?

For this recipe you can chose any flavor of juice or preserves you like so get creative! I made apple/apricot & cranberry/blueberry. Yum!

Serving in small paper cups makes the presentation beautiful and mess free.

Recipe from Everyday Foods: Makes about 60 pieces

1 1/3 cups fruit juice (any flavor) or water

4 packets powdered gelatin (1oz total)* I used one box of Knox gelatin

2 1/2 cups sugar

2 cups fruit preserves or jam (you chose the flavor)

1. Place 2/3 cup juice in a small bowl or measuring cup and sprinkle with gelatin. Let sit 5 minutes. Meanwhile , in a medium saucepan combine remaining 2/3 cup juice and 1 1/2 cups sugar. Bring to a boil over medium-high and cook, stirring until sugar dissolves, 5 minutes. Add preserves and whisk to combine. Return to a boil and cook until thick and syrupy, 2 minutes. Add gelatin mixture and wisk until gelatin dissolves. Pour throught a fine-mesh sieve into an 8″ square baking dish. Refrigerate until set, 3 hours (or up to 2 weeks).

2. Place 1 cup sugar in a pie plate or shallow bowl. Cut fruit jelly into 1″ squares. Toss in sugar to coat just before serving.

* Make Ahead: Keep uncoated jellies, tightly covered with plastic wrap, in the refrigerator.

*Freutcake tips: When cutting jellies, use a knife that has been run under hot water for easier cutting. Also, the first row of jellies are more difficult to take out and should definitely be eaten as testers!
